Our Story

Honest ingredients. Traditional methods. Exceptional bread.
Carraig Rua is a certified organic artisan bakery based in Co Leitrim.  It was started by Liam and Justina Gavin (Drumanilra Organic Farm) and Michael Schwessinger in 2021  to supply  Honestly Farm Kitchen Restaurants.  We now also supply bread to several locations in Sligo Leitrim and Roscommon.

 

We make bread by hand, using traditional methods that have been used for centuries, organic flour and carefully chosen natural ingredients.   Our bread does not contain any preservatives, flour agents, enhancers,  enzymes, emulsifiers, or pesticides.  Just organic flour, seeds, water, salt, time, skill, and the knowledge of our master baker.

Our Breads

We specialise in sourdough: slow-proved, full of flavour and gut-friendly.
Our sourdough is fermented for up to 48 hours, giving the dough time to develop naturally. That slow fermentation helps create the depth of flavour, texture and character that good sourdough is known for.
We only use organic flour in our breads, along with simple organic ingredients using traditional artisan techniques. Nothing is added that doesn’t need to be there.
Alongside our sourdoughs, we also bake a wide range of artisan breads, including olive ciabatta, rye breads,  brown soda bread and many others well as rolls and pastries.

Our Team

Our master baker, Michael, is an experienced baker who has baked in Germany, Norway, Romania, Spain, West Cork and finally settled in Co. Leitrim bringing years of experience and knowledge to Carraig Rua Bakery.
Michael is a strong believer in traditional artisan baking, natural ingredients and bread made without preservatives or unnecessary additives.
Working under his watchful eye is our talented bakery team, who shape, prove and bake by hand every day. Their skill, attention and experience can be seen in every loaf that leaves the bakery.

Our Philosophy

We believe bread should be simple, honest, and made with natural ingredients.
That means organic flour, slow fermentation, traditional methods, and time.
We’re proud to be one of the very few certified organic artisan bakeries in Ireland.
For us, organic baking is about making better bread, using better ingredients, and keeping unhealthy additives and pesticides out of the food we eat.
